Cranberries are very versatile

Cans of cranberry sauce are hitting the shelves. Try these main dish meals and dessert recipe for a change.

Cranberry Meatballs

In a bowl, mix together

2 LB. ground beef

2 eggs

1 c. dry bread crumbs

2 T. dried parsley

1/3 c. catsup

2 T. minced onion

2 T. soy sauce

1 T. minced garlic

1 t. salt

Shape into 1" balls and place onto a cookie sheet.

Bake at 450û for 8 to 10 minutes.

In a Dutch oven, bring to a simmer

1 (16 oz.) can whole cranberry sauce

1 (12 oz.) bottle chili sauce

2 T. brown sugar

1 T. yellow mustard

1 T. lemon juice

1 T. minced garlic

Simmer for 10 minutes.

Add meatballs and simmer on low for 45-50 minutes, stirring occasionally.

Serve warm.

Cranberry Beef Roast

In a 6 quart Dutch oven, brown on both sides, a floured 4 to 5 LB. chuck roast in 2 T. shortening.

Add,

1 large carrot, shredded

2 medium onions, chopped

1 c. water

1/2 t. ground cloves

1 t. cinnamon

Cover and bake at 375û for 2 hours.

Remove from oven and pour off all but 1 c. broth.

Add,

1 (16 oz.) can whole cranberry sauce

2 T. cider vinegar

1/2 c. grape jelly

Recover and bake 1 to 11/2 hours longer at 375û or until tender.

Cranberry Sweet and Sour Pork

In a bowl, mix

1 c. whole cranberry sauce

1/2 c. BBQ sauce

liquid from 1 (83/4 oz.) can pineapple tidbits

1 T. cornstarch

set aside.

In a skillet or wok, heat 1 T. vegetable oil

Add,

11/2 LB. pork cubes or strips

Cook until no pink shows.

Add,

1 medium green pepper, cut into strips

the drained pineapple tidbits

Cook for 2 minutes.

Stir in sauce mixture and heat until it thickens.

Serve over rice.

Cranberry Cheesecake Pie

In a bowl, mix

11/4 c. milk

2 small Jell-O cheesecake - flavored instant puddings

1/2 t. grated lemon peel

Whisk for 1 minute.

Add 4 oz. Cool Whip and stir.

Pour 1/2 the mixture into a gram cracker crust pie shell.

Spread 1 c. whole cranberry sauce over top.

Repeat layers and top with 4 oz. Cool Whip and sprinkle 1/2 c. chopped nuts.

Chill overnight.
